Thierry CoopmanandGitHub dcc8496600 fix(api): EN-1023 mark V3Connector.capabilities as optional (#744 )

Follow-up to PR #727. The field is populated by the server today, but
making it required forces a breaking schema bump on every existing v3
client that pre-dates the catalog work. Mark it optional in the OpenAPI
spec; SDK regenerates the Go field with `omitempty`.
