zeekay 629eda2e17 rebrand to @hanzo/analytics with white-label support, AST tracking, IAM auth

- Rename package from umami to @hanzo/analytics
- Replace all user-facing "Umami" branding with env-configurable values
- Add white-label branding module (src/lib/branding.ts) sourcing from NEXT_PUBLIC_* env vars
- Add IAM OAuth login flow (/api/auth/iam) for Hanzo ID / Casdoor SSO
- Replace logo with Hanzo H mark (configurable via env)
- Update tracker script: support data-hanzo-event alongside data-umami-event
- Add AST structured data collection to tracker (auto-collects page sections, JSON-LD, element interactions)
- Add section visibility tracking via IntersectionObserver
- Expose window.hanzo alongside window.umami for backwards compat
- Update Docker compose, CI/CD workflows, Kafka client ID
- Update localStorage keys from umami.* to hanzo.analytics.*
- Fix prisma config for v6.7+ compatibility
- Remove upstream telemetry and update URLs
- Add .env.hanzo with datastore (ClickHouse) config documentation
