zeekay 94a58577ba fix(nodes): use multi-arch luxd image (C-Chain EVM on arm64 + amd64)

ghcr.io/luxfi/node:latest is amd64-only; under qemu on arm64 the out-of-process
C-Chain EVM plugin can't complete its go-plugin handshake. The v1.30.14-dchain
tag is multi-arch (amd64+arm64) — verified: arm64 build boots natively, C-Chain
eth_chainId=0x7a69 (31337), no qemu. lux/hanzo/zoo now have working C-Chains on
both local (arm64) and DOKS (amd64).
