zeekay d1d7104522 tests: the version reads that cannot be constants ...

The version commit turned `env!("CARGO_PKG_VERSION")` into a run-time call
everywhere, and some tests held it where only a literal or a `&str`
pattern goes: rmcp-client's two oauth tests kept the User-Agent in a
`const`, two core tests built expectations with `concat!`, and the TUI's
tests masked the header's version with `str::replace`, which takes no
`&Version`. They read `hanzo::version::get()` at run time now, the
User-Agent once, as the client itself does. Every test target builds.
