zeekay 0e1bcc66d6 feat: update documentation domain to consensus.lux.network

- Change domain from ui.lux.finance to consensus.lux.network
- Update CNAME files in both public and docs directories
- Update deployment documentation with new domain
- Add comprehensive deployment guide for GitHub Pages, Vercel, and Netlify
- Include DNS configuration instructions for the new domain
