zeekay fae0efeb1b chore: normalize naming to LX across codebase 
Apply consistent naming conventions throughout:
- Standardize product name to "LX" in documentation
- Update README files and API documentation
- Apply linter fixes to all source files
- Update Hummingbot connector documentation

zeekay d0dd34ebc6 chore: consolidate scripts and cleanup 
- Remove QUICKSTART.md (info in README)
- Move run.sh, run-e2e.sh, test-api.sh to scripts/
- Remove duplicate port-specific scripts
- Update gitignore for test binaries and logs
