zeekay 66a408dc58 Replace geth/log with luxfi/log throughout codebase ...

- Updated plugin/evm/log/log.go to use luxfi/log with zap backend
- Replaced all github.com/luxfi/geth/log imports with github.com/luxfi/log
- Updated scripts/eth-allowed-packages.txt to reflect new imports
- Added go.uber.org/zap dependency for log handler creation
- Removed references to local coreth/log package

This completes the migration to use externalized luxfi logging across
all projects instead of geth's logging implementation.
