zeekay bd6ea11819 fix: replace wildcard CORS with env-based origins, migrate zerolog→slog 
- CORS defaults: lux.exchange, zoo.exchange, pars.market
- Override via CORS_ALLOWED_ORIGINS env var
- Replace zerolog with stdlib log/slog for consistency
