fix: remove dangling symlinks from codex-cli/bin and update gitignore

- Remove tracked symlinks that were causing build failures
- Add gitignore patterns to prevent binary symlinks from being tracked
- Fixes 'cp: not writing through dangling symlink' error in release workflow
