fix: escape MDX special characters and convert JSX components to markdown

- Escape < characters followed by numbers (e.g., <100ns becomes <100ns)
- Convert Tabs/Tab JSX components to markdown headers for compatibility
- Convert Cards/Card JSX components to markdown links
- Update mdx-components.tsx to include all fumadocs-ui components
- These fixes resolve MDX build errors in GitHub Actions
