Build on Go 1.27

Moved the go directive to 1.27.1. go build ./... and go vet ./... are clean. The e2e suite still fails in BeforeSuite because no local node is reachable; it fails identically with this change reverted. Co-authored-by: Hanzo Dev <[email protected]>
