fix(zoo): pin validators to ghcr.io/luxfi/node:v1.30.40 (v1.27.4 unpublished)

ghcr.io/luxfi/node:v1.27.4 is NotFound in GHCR (would ImagePullBackOff).
v1.30.40 is the published, proven tag the Lux production cluster
(do-sfo3-lux-k8s, lux-mainnet/testnet) currently runs 5/5 validators on.
Zoo is a Lux L2 and uses the upstream OSS node image directly.
