Fix CI: Use ava-labs/avalanchego for release downloads

Browse Source 
- luxfi/node doesn't have releases, use ava-labs/avalanchego
- Strip leading 'v' from LUX_VERSION to avoid double 'v'
- Update all download URLs and git clone to use correct repo
- Successfully tested locally - downloads and installs correctly
- This should finally fix all e2e test Install Lux Release failures
